Green olives filled with almonds in brine

Carefully hand-filled, Greek Amphissa olives - a traditional specialty! These olives are carefully cultivated on small family farms in Greece in the region between the Gulf of Corinth and the Aegean Sea and are manually harvested. With their aromatic flavor, their crisp texture and the mild, slightly sweet almond taste they are perfect for every antipasti plate.

Preparation
The 'Amphissa' olives are hand-picked. Harvest-fresh olives are very bitter and inedible. Therefore, the olives are stored in water and sea salt for several months in great, big barrels in order to remove their bitter substances. After the pitting, the olives are manually filled with almonds and filled into glass jars in a brine with water, lemon juice and sea salt. For preservation, the olives are heated.
