100% pure coconut taste - pureed, ground coconut pulp is great for the creative kitchen giving your meals a wonderful aromatic coconut flavor. Since we use no additives the coconut fat may settle out. At temperatures above approx. 25°C, the puree softens and/or liquefies. Th erefore briefly warm up in a water bath and stir well prior to use.

Preparation
The fibrous outer coconut cover is removed, the coconut shell is opened and the white pulp is harvested. Next, the pulp is washed, blanched, grated and dried. The grinding of the coconut flakes occurs in a two-step process. In the second grinding step that takes place in a colloid mill, a homogeneous, fine and paste-like puree is created. The puree is filled into jars, sealed, lidded and packed.

Why do European almonds sometimes taste bitter?
Almonds from Europe are very aromatic and usually contain a proportion of bitter kernels. This cannot be ruled out 100 per cent, as both bitter and sweet almonds grow on the same tree and cannot be visually distinguished from each other. At Rapunzel, we only accept a proportion of one percent bitter almonds in our quality assurance, which is absolutely harmless to health. For this purpose, the raw goods are tested for bitter seed content and prussic acid at goods receipt. Only if all parameters are in order, are the almonds released for sale or further processing. If you want 100 per cent sweet kernels, please choose Californian almonds. They are guaranteed bitter-free.

Why is the consistency of nut butters different?
Our nut butters consist of 100% of the respective nut. This means that only the respective nut, almond or oilseed is ground. We do not add any oil to the butters and use neither binders nor emulsifiers. The consistency is a sign of the naturalness of the product. The consistency of the butters depends on two factors. On the one hand, from the natural fluctuations of the raw material due to growth conditions in the harvest year. The fat content of the nuts plays a role here. On the other hand, the product freshness changes the consistency. Immediately after filling, the solid components of the nut and the nut's own oil are still well mixed, which makes the butters more liquid at first. In the course of storage, after about six months, the solid components in the jar sink to the bottom and the nut's own oil collects at the top. Please just stir in the oil.

Are the nut butters heated during production?
The nuts or seeds for the nut butters are roasted or blanched. During the grinding of the nuts, temperatures of approx. 60 to 70 °C are reached. Therefore, nut butters are not suitable for a raw food diet.

Why does the oil settle in the jar of nut butter?
Rapunzel nut butters are 100% pure nut butters. They are produced without emulsifiers and stabilisers. This is why the nut's own oil (approx. 10%) settles on the surface after filling. This is not possible in any other way due to production technology, as we do not use additives, such as fat or thickeners. You can stir the oil back into the nut butter with a fork, for example, or pour it off and use it as a high-quality salad oil. The oil settling testify to the purity of the product.
