Capers in olive oil

Preserved in extra virgin olive oil, the flowers of the caper shrub have a savory and aromatic flavor and a pleasant, crispy bite. The flowers are manually harvested in the early morning hours when the flowers are still closed. This specialty that requires a lot of tender care is lovingly made in a family business in Italy.

Preparation
After the capers have been harvested they are salted and shortly heated in wine vinegar. Next, the capers are hand-filled into jars and the jars are topped off with extra virgin olive oil.

Once opened, the remaining antipasti should be kept covered with olive oil and stored in a cool place. If kept in the refrigerator, the olive oil can become flaky and white deposits will form. This is a completely natural coagulation process of olive oil at low temperatures, especially for extra virgin olive oil. This process has no influence from the quality of the oil. At room temperature, the olive oil liquefies again.
