Sun-ripened artichoke hearts from Southern Italy. Harvested by hand and filled into jars with the best extra virgin olive oil. Enjoy the mild and tender taste. Perfect as Mediterranean appetizer.

Preparation
Freshly-harvested, Italian artichokes are cleaned, washed and cooked with water, salt and wine vinegar. Next, they are manually cut in halves or quarters then put into jars, seasoned and topped off with extra virgin olive oil. For preservation, the jars are heated.

FAQ about Artichoke hearts in olive oil

Once opened, the remaining antipasti should be kept covered with olive oil and stored in a cool place. If kept in the refrigerator, the olive oil can become flaky and white deposits will form. This is a completely natural coagulation process of olive oil at low temperatures, especially for extra virgin olive oil. This process has no influence from the quality of the oil. At room temperature, the olive oil liquefies again.
