Mixed olives with herbs, pitted, oiled

Green aromatic and fruity Amphissa olives with a firm, juicy fruit pulp mixed with aromatic Kalamata olives: a great combination that brings variety on the antipasti plate. The olives are carefully grown and harvested in small family farms in Greece. Since the olives are processed carefully without any heating, they maintain their high-quality raw food quality. The olives are pitted. They are not pickled, neither in brine nor oil. Only a light marinade made with best olive oil extra virgin and Mediterranean herbs rounds off the natural olive flavor.

Preparation
The olives are harvested. For debittering they are pickled for several month in brine made of sea salt, water and wine vinegar. This step lasts a little longer for the Kalamata olives than for the green Amphissa olives. Next, they are pitted, mixed and refined with extra virgin olive oil and Mediterranean herbs. Finally, the olives are filled into jars.
