Maple syrup is produced from the sap of wild maple trees. The trees are tapped in the spring and the bright, clear sap is collected and thickened in open kettles to approx. 1/40 of its original volume. The finished maple syrup is filled into bottles and packed.

No. Maple syrup is a natural product obtained in spring by tapping the maple trees in Canada. The sweet juice is thickened 40-fold to a sugar content of approx. 65-66% without the addition of preservatives. When bottled, it is pasteurised at 92° degrees to avoid fermentation during prolonged storage.
After opening the maple syrup, naturally occurring yeasts can enter the bottle through contact with air. These can form a thin white layer on the surface during storage. In general, yeasts are nutritionally harmless and are consumed in various foods. The process can be delayed, but not eliminated, by storage in the refrigerator. The bottle should always be closed quickly after opening. If yeasts have formed, the top layer can be quickly removed by pouring it off.
Yeast formation cannot be completely avoided in this traditional natural product, as no preservatives are used. However, it has no effect on the taste and quality of the product.
