Vegan seasoning paste made from sun-dried tomatoes, high-quality olive oil extra virgin and fresh basil. This speciality is made in a family business in Italy. Usage
Don't heat the pesto, add it directly to the warm and freshly drained pasta. This pesto can also be used to season pizza, salads, grilled vegetables, sauces and tastes great on toasted bread slices or as a dip.

Preparation
Dried tomatoes are washed and soaked in water. Then, the tomatoes are centrifuged in order to expel 90-95% of the water. The remaining ingredients are added to the tomatoes and the mixture is filled into jars. A shot of olive oil is added onto the surface. For preservation, the jars are gently heated for a short time.

Why do European almonds sometimes taste bitter?

Almonds from Europe are very aromatic and usually contain a proportion of bitter kernels. This cannot be ruled out 100 per cent, as both bitter and sweet almonds grow on the same tree and cannot be visually distinguished from each other. At Rapunzel, we only accept a proportion of one percent bitter almonds in our quality assurance, which is absolutely harmless to health. For this purpose, the raw goods are tested for bitter seed content and prussic acid at goods receipt. Only if all parameters are in order, are the almonds released for sale or further processing. If you want 100 per cent sweet kernels, please choose Californian almonds. They are guaranteed bitter-free.

How long is the shelf life of opened pestos/spice pastes?

We recommend that you always remove the contents with a clean spoon, cover the remaining contents with oil if necessary, reseal the jar quickly, store in the refrigerator and use up soon.
