The artichokes are carefully harvested by hand in the early hours of the morning and processed immediately afterwards by a small traditional family business. Almonds from Europe are very aromatic and usually contain a proportion of bitter kernels. This cannot be ruled out 100 per cent, as both bitter and sweet almonds grow on the same tree and cannot be visually distinguished from each other.
At Rapunzel, we only accept a proportion of one percent bitter almonds in our quality assurance, which is absolutely harmless to health. For this purpose, the raw goods are tested for bitter seed content and prussic acid at goods receipt. Only if all parameters are in order, are the almonds released for sale or further processing. If you want 100 per cent sweet kernels, please choose Californian almonds. They are guaranteed bitter-free.
