Kalamata' olives are characterized by their aromatic flavor and their multi-colored skin. The olives are cultivated with tender care by small family farms in the sunny mountain regions of the southern Peloponnese in Greece and harvested by hand when fully ripe. Since the olives are processed carefully, they maintain their high-quality raw food quality. The olives are pitted. A light marinade made with best olive oil extra virgin and Mediterranean herbs rounds off the natural olive flavor.

Preparation
The Kalamata olives are harvested. For debittering they are pickled for several month in brine made of sea salt, water and wine vinegar. Next, they are pitted and refined with extra virgin olive oil and Mediterranean herbs. Finally, the olives are filled into jars.
