Particularly sweet, aromatic demeter figs from controlled biodynamic agriculture. The sun-spoilt fruits are cultivated on the steep slopes in the Turkish Aydin region and are produced in the Rapunzel Turkey project. The figs are layered in a traditional pattern that resembles the slated roofs of the Aydin region. Therefore they are called Protoben figs.

Preparation
The manually harvested figs are dried in the sun. Subsequently, the figs are shock frozen in order to eliminate insects and washed in a sea salt solution giving them a juicy, glossy surface.
